I want to copy and paste an existing document into this site. So far, I can't see any way to render italics without doing all of the HTML on the document myself. This is not going to happpen.

What browser are you using?
You should see either a MSWord-like toolbar or a mini-editor toolbar for doing things like marking italics.

The problem with that is that I need to go through and edit everything by hand.

Maybe I'm not understanding what you're trying to do?
Take it from the top and tell me what's happening. :)

I have a plain text file with the italics hand-coded in HTML. I copy and paste the text file into the input window.
When the text is rendered, the hand-coded italics commands are not translated into italics.

How to post plain text wth handcoded HTML
Click the|Source| button in the editor. Paste your plain text file into the window. Preview and see if it looks right. If the lines don't wrap. Click source again, repaste, go down to |Input format| and choose |Filtered HTML| instead of |Clean HTML|. Preview again to see how it looks. One of those should work.
If it doesn't, I'll have you email to me and I'll post for you while I try to figure out why that doesn't work. :)
